- 1/2 cup mixed herbs finely minded – equal portions fresh: thyme leaves (I used broad leaf thyme) sage and cilantro
- 1 tablespoon garlic freshly grated
- 1 large shallot peeled and finely minced
- 1 1/2 teaspoons kosher salt adjust for your diet
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon smoked paprika or sweet
- 1 teaspoon ground coriander
- Optional: 3/4 teaspoons red pepper flakes
- 2 tablespoons extra virgin olive oil
- avocado oil for greasing the indoor grill pan
Bread and topping ingredients
- bread of choice I used mini yogurt flat bread
- sliced tomatoes
- salad greens I used micro broccoli
- salad dressing any home made dressing will do
Instructions
Season the turkey ground meat
- Add all the seasoning ingredients and turkey ground meat into a medium mixing bowl. Use hands or spatula to combine thoroughly without over mixing.Note: Can be divided and shaped immediately or set aside for up to 1 hour.2 pounds ground turkey meat, 1/2 cup mixed herbs, 1 tablespoon garlic, 1 large shallot, 1 1/2 teaspoons kosher salt, 1/2 teaspoon freshly ground black pepper, 1/2 teaspoon smoked paprika, 1 teaspoon ground coriander, Optional: 3/4 teaspoons red pepper flakes, 2 tablespoons extra virgin olive oil
- Divide the seasoned meat into 8 portions.Shape into patties about 1/4 inch or less thickness.
Preheat a cast iron grill pan. Grill the Turkey Patties
- Heat the grill pan using medium high heat. When the pan starts to smoke, brush a coat of avocado oil.avocado oil for greasing the indoor grill pan
- Grill the patties in batches – 2 to 3 patties at a time depending on the size of the pan. Grill 3 to 4 minutes per side until golden and cooked through. Remove from pan and let the patties rest for five minutes before assembling.Note: alternatively the patties can be grilled on an outdoor grill.
Assemble the patties as desired.
