Blue Passion Smoothie

Need I say, another healthy antioxidant and a nutrient-rich smoothie. For this recipe, I wanted to include passion fruit – I love everything passion fruit. Besides having an amazing flavor, passion fruit is rich in Fiber and Vitamin C. I decided to add blueberries, which is know for being at the top of the fruit chain for its abundance of antioxidant. Avocado rounded out the flavors, giving it a creamy texture and it is well known for its healthy fat. Smoothies have grown on me over the past year and they allow me to get in a lot of top nutrients; it’s like drinking the rainbow of colors. I truly enjoy a delicious smoothie as a post workout breakfast and they are always fun to make.

Blue Passion Smoothie

Ingredients

  • 1 cup fresh coconut water
  • 1/3 cup passion fruit purée
  • 1 cup fresh frozen organic blueberries
  • 1/2 small avocado
  • 1/2 teaspoon pure organic vanilla extract
  • 2 tablespoons chopped walnuts
  • 5 small mint leaves
  • 1 cup crushed ice

Instructions

  1. Add all ingredient to a blender. Blend until desired smoothie texture - up to one minute. 

    Pour into your favorite glass, sip and enjoy. 

Recipe Notes

I am able to find passion fruit purée at Amazon. It ’s relatively expensive but it lasts a while and you can freeze it. Plus you can use it in other recipes including baking. Don't like passion fruit, try substituting two kiwis  instead.

Also, I usually buy one or two young coconuts every two weeks - these produce about three cups of fresh coconut water. The water stores well in the refrigerator- this way you don’t have to chop a coconut ever time you need the water.
