This Watermelon Spinach Smoothie is a refreshing and delicious smoothie that will not only hydrate you but it offer loads of nutrients. To round out the flavor and texture of this nutrient rich smoothie: I added my favorite protein creamy peanut butter – which also contains the desirable good fat; Avocado offers additional good fat and enhances the creamy peanut butter texture.

This recipe made approximately 32 ounces at under 310 calories (A 16 ounces serving has under 155 calories). So go ahead and blend up these awesomely nutritious ingredients in about five minutes and indulge your palate with this refreshing smoothie. This is a dairy-free smoothie and it’s flexible enough if you want to add yogurt or milk. Enjoy.

Ingredients

  • 3 cups baby spinach organic
  • 1 1/2 cups watermelon chunks seedless
  • 1/4 haas avocado
  • 1 thin slice of fresh ginger peeled
  • 1 tablespoon peanut butter organic
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon ground cardamom
  • 1 1/2 cups ice cubes

Instructions

  1. Add all ingredients into the blender. Blend/purée until smooth. Pour into your favorite glasses, garnish with watermelon slice and spinach if desired, and serve.Enjoy.

Recipe Notes

If you don’t like peanut butter you can use almond butter (smoothie will reflect the almond butter flavor).
