Ingredients

For the Vinaigrette

For the Pineapple and Salad Ingredients

  • 1/3 Pineapple cut into 3 to 4 stripss
  • olive oil for brushing the pineapple
  • 1 pint cherry tomatoes Cutup into halves
  • 1/4 cup red onion thinly sliced
  • grilled pineapple
  • 4 cups arugula organic
  • 1/4 cup walnut halves toasted

Instructions

Make the vinaigrette

  • Add all the vinaigrette ingredients in a large mixing bowl. Use a small whisk to emulsify.
    1 teaspoon Fresh thyme leaves, 1 clove garlic, 1/2 habanero pepper, 1 tablespoon poppyseeds, 2 tablespoon passion fruit vinegar, 2 tablespoon walnut oil, 2 tablespoon extra virgin olive oil, kosher salt , freshly ground black pepper

Grill the pineapples

  • Heat a cast iron grill pan, using high heat. Brush the pineapples with olive oil. Grill both sides until desired grill marks are achieved. 2 to 3 minutes per side. Remove the pineapples and chop into bite sized chunks.
    1/3 Pineapple , olive oil for brushing the pineapple
  • Add the pineapple chunks, red onions and tomatoes into the bowl with the vinaigrette. Toss to coat the fruits.
    1 pint cherry tomatoes, 1/4 cup red onion, grilled pineapple

Assemble the salad

  • Layer the fruits, onions and tomatoes on top of the arugula. Drizzle the vinaigrette from the bottom of the bowl onto of the salad. Sprinkle the walnuts on the salad. Enjoy.
    4 cups arugula, 1/4 cup walnut halves
