- skin from 1 ripened pineapple rinsed thoroughly
- 8 cups water
- 4 pieces lemongrass stalks (about 3 inches each)
- 3 – 5 fresh thyme sprigs
- 2 pieces fresh turmeric peeled and grated
- 3 inch piece fresh ginger grated
- 5 whole cloves
- 1 cinnamon stick (about 3 inches piece)
- white pepper freshly ground – about 10 – 15 grinds
- 1/2 cup dried chamomile flowers
- 1 tablespoon Manukau honey or your preferred sweetener
Instructions
- In a 4-quart stock pot, add the water, pineapple skin, lemongrass, thyme, turmeric, ginger, cloves, cinnamon stick and freshly ground black pepper. Bring to a boil. - Turn off the stove. Add in the chamomile flowers. Steep for 5 to 8 minutes. Strain. Pour into your favorite tea cup. Sip warm.
