First, start with creating a simple spice mix by grinding coriander seeds, black peppercorns, black mustard seeds, fennel seeds and red pepper flakes. Specifically, grind the spices in a mortar and pestle or use a spice grinder, Additionally, grind the aromatics; fresh garlic, fresh sage and oregano. This can be done in the mortar and pestle or use a mini food processor.

Next, season turkey ground meat with the spices and aromatics as well as salt and olive oil. For this recipe, two pounds of turkey white or dark meat works. Further, the recipe does not require any marinating time. This amount of meat makes six to eight patties depending on your desired portion sizes. Moreover, once the patties are shaped they are ready to be seared to perfection.

Ingredients

For the spice mix:

For the aromatics:

  • 6 – 8 cloves fresh garlic chopped roughly
  • 1 tablespoon fresh sage leaves
  • 2 -3 Cuban oregano Aka Mexican oregano or broad leaf thyme

Instructions

Prepare Spice Mix and Aromatics:

  • Add the spices to a mortar – coriander seeds, black peppercorns, black mustard seeds, fennel seeds and red pepper flakes. Grind the spices as fine as possible. Transfer to a small bowl.
    1 teaspoon coriander seeds, 1 teaspoon black pepper corn, 1/4 teaspoon black mustard seeds, 1/2 teaspoon fennel seeds, 1/2 teaspoon red pepper flakes
  • In the same mortar, grind the aromatics, garlic, sage leaves and oregano. Transfer into the bowl with the spices.
    6 – 8 cloves fresh garlic, 1 tablespoon fresh sage leaves, 2 -3 Cuban oregano

Season and shape the burgers:

  • In a medium mixing bowl, combine the turkey ground meat, salt, spices and aromatics. Mix well to combine.
    2 pounds Turkey ground meat, 2 teaspoons kosher salt, 1 -2 tablespoons extra virgin olive oil
  • Divide the mixture into 6 to 8 portions. Shape into patties.

Cook the Burgers:

  • Heat a cast iron skillet over medium high heat. When the pan starts to smoke, add the avocado oil and reduce heat to medium.
    2 – 3 tablespoons extra virgin olive oil
  • Sear the patties a few at a time. Cook each side 3 to 4 minutes per side. Use a fish spatula to flip. If using cheese, add the cheese during the last 1 to 2 minutes and cover the pan to melt the cheese. Transfer the burgers to a platter.

Assemble the Burgers:

  • Assemble the burgers with your favorite toppings and serve in either lettuce wraps or hamburger rolls. Serve and enjoy.
