- 10 ounces baby organic spinach roughly chopped
- 1/4 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper
- 2 teaspoons soy sauce
For the Turkey Patties
- 2 pounds turkey ground meat
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon red pepper flakes
- 2 teaspoons soy sauce
- 1 tablespoon mustard grey poupon dijon
- 2 ounces goat or feta cheese
- 2 tablespoons extra virgin olive oil

Instructions
Make the Spinach Herbed Mixture
- In a skillet or frying pan, cook the shallots in extra virgin olive oil. 2 to 3 minutes.2 tablespoons extra virgin olive oil , 1 small shallot

- Add spinach, salt, freshly ground black pepper and soy sauce. Mix and cook until spinach has wilted. About 2 minutes. Prepare the Turkey Patties
- In a medium mixing bowl, combine all the turkey patties ingredients, including the spinach mixture.
