Hibiscus Watermelon Refresher Drink

An easy delicious and healthy refresher drink. Herbal dried Hibiscus steeped into a tea then fresh watermelon and kiwi are added for a healthy refreshing drink. Can be sipped warm or pour over ice cubes. Great for Spring or Summer.

Ingredients

FOR THE HIBISCUS TEA

FOR THE WATERMELON KIWI INFUSION

  • 2 Kiwis Peeled and Chopped or Sliced
  • 1 small piece of ginger about 1 inch length 1/2 inch diameter. Peeled and chopped.
  • 12 -15 fresh mint leaves
  • 2 small sprigs thyme leaves
  • 1 lime zested and juiced
  • 2 cups watermelon chopped

Instructions

MAKE THE TEA

  1. In a tea pot or saucepan, bring the water just to a boil. Turn off the stove. Add the dried hibiscus flowers. Let the hibiscus steep for 5 to 7 minutes.

  2. Strain the tea. Discard the hibiscus. Cool.

    Note: to quick cool place the tea in the freezer for 15 to 20 minutes.

PREPARE THE WATERMELON MIXTURE

  1. In a bowl or small pot, add the kiwi, ginger, lime zest and juice, mint leaves, thyme and watermelon.

  2. Use a cocktail/bar muddler or wooden spoon and smash all the ingredients into a puree.

    Note: the puree doesn't need to be smooth.

LET'S BRING THE REFRESHER DRINK TOGETHER

  1. Once the tea is cool, Pour it into the puréed ingredients. Stir.

  2. Strain the drink into a pitcher. Discard the puréed stuff.

  3. Pour over ice cubes and enjoy.

    Alternatively, if the preference is a warm sip, no need to cool the hibiscus tea.
